Ingredients
– 3 medium-sized ripe avocados
– 4ozs shrimp minced
– 2 stalks of celery
– 2 tablespoons mayonnaise
– 2 tablespoons cream
– a little lime juice
– 1 teaspoon sherry
– salt and pepper
Method
Halve avocados and remove stones.
Sprinkle with a little lime juice.
Mix shrimp meat with finely chopped celery and add mayonnaise.
Whip cream stiffly and add it with the sherry, season.
Pile into hollows of pears.
